CHEF MARC HOSTED “I SAN MARZANO DOP’ DINNER AT AHERN HOTEL

The Ahern Hotel formerly the Red Dragon on E. Sahara Avenue is in full remodel mode. Local celebrity Chef Marc Sgrizzi relocated his top-rated Italian restaurant from the Summerlin area to the Ahern in 2019 where he has two restaurants. His Chef Marc’s Italian Steakhouse on the second floor is being remodeled and temporarily closed, while a newly remodeled Trattoria by Chef Marc is open on the first floor where our dinner was held. It was a small gathering, which included popular local entertainer Frankie Moreno, to promote San Marzano DOP tomatoes exclusively grown in the Argo Sarnese-Nocerino area in the South of Italy.

For American shoppers, the shape is like a plum tomato, but oh so much richer in taste. In 1996, San Marzano tomatoes were recognized with the European PDO quality label, a protected designation of origin, as Pomodoro San Marzano dell’Agro Sarnese-Nocerino DOP.

Chef Marc had the challenge to create a four-course dinner with each course highlighting these peeled tomatoes, which was an introduction to the carefully grown tomatoes along with the chef’s culinary talents. First course was Pomodoro Pizza Romana featuring a chilled tomato on bread. Second was Filetto Di Pomodoro over fresh homemade linguine. Third a scene stealer was the tomato with slow-cooked calamari, zucchini and orzo. Probably most ingenious was the Sweet Tomato Tart accompanied by homemade basil gelato.

Chef Marc said they grow fresh vegetables and herbs at the hotel and that he makes frequent trips to Italy to source quality ingredients, refine his regional dishes, and create stellar food and wine menus. Buon Appetito!
